Position Title: F&B Inventory Control Analyst

Reports To: Warehouse Manager

Department: Warehouse

Shift: Varies

Role: The F&B Junior Inventory Control Analyst is responsible for ensuring the accuracy of all inventory transactions and supporting the property’s food and beverage costing processes. This role works closely with both the Finance and F&B teams to maintain effective cost controls and promote operational efficiency. Adheres to all Company, Safety and Department policies and procedures. Fosters teamwork and provides excellent guest service, anticipates guest needs to exceed guest expectations. Builds brand loyalty by living the JW Marriott Core Values.

Qualifications:

  • Education: High School diploma or equivalent.
  • Experience: 2–3 years of inventory control experience, ideally in food & beverage, hospitality, casino, or warehouse operations.
  • Skills:
    • Strong knowledge of Food & Beverage operations within a casino environment.
    • Proficiency with inventory control systems such as Stratton Warren and other inventory management tools.
    • Advanced skills in Excel, along with proficiency in Word and Outlook.
    • Ability to prepare month‑end spreadsheets and reporting using Excel.
    • Ability to independently perform inventories, spot checks, and verify stock accuracy.
    • Solid understanding of weights and measures and their application in F&B operations.
    • Effective decision‑making skills and strong problem‑solving abilities.
    • Excellent communication skills, with the ability to work collaboratively with Finance and F&B teams.
  • Required:
  • Must be at least 21 years of age.

Required Work Cards needed:

  • Valid Clark County Health Card
  • Valid Las Vegas Alcohol Awareness Card (TAM Card)

Key Responsibilities: Responsibilities include, but are not limited, to the following:

Inventory Management & Accuracy

  • Maintain and update accurate records of all F&B menu costing, inventory transactions, and recipe data within the inventory control system (e.g., Adaco/Stratton Warren).
  • Maintain the inventory database, ensuring the accuracy of product barcodes for the warehouse, spa, and all food and beverage outlets using scanners.
  • Perform month‑end physical inventories and assist with manual inventory entries for food outlets.
  • Conduct regular spot checks and quality checks on stored inventory, discarding items that do not meet company standards.
  • Identify and update lists of inventory items at risk of spoilage.
  • Maintain warehouse par levels and ensure efficient stock rotation practices.

Cost Control & Analysis

  • Assist in maintaining and mapping recipes to support Food & Beverage teams in managing theoretical food costs.
  • Analyze theoretical versus actual food cost variances within the inventory control system.
  • Post wastage entries for all outlets, including the warehouse.
  • Audit daily outlet requisitions to support accurate cost tracking.

Receiving & Invoice Processing

  • Assist with receiving orders in Adaco and verify accuracy of incoming products, especially items priced by weight.
  • Spot‑check incoming weighted items to ensure correct pricing and quantities.
  • Process non‑physical invoices and ensure timely and accurate entry into the inventory system.
  • Manage the manual integration process between the spa’s Book4Time system and Adaco.

Warehouse Coordination & Compliance

  • Review and resolve discrepancies discovered during warehouse inventory counts.
  • Recommend and support organizational improvements in the warehouse to enhance inventory efficiency.
  • Coordinate with the F&B team regarding product shortages and stock integrity issues.
  • Implement loss‑prevention measures to reduce spoilage, theft, and shrinkage.

  • Perform quality assurance on product storage and ensure compliance with company standards.
  • Support operational efficiency and cost control initiatives as assigned.

When on the casino floor, the noise level increases too loud. Additionally, smoking is permitted in casino areas consistent with Nevada state regulations, which are followed by the employer.

  • The associate is frequently required to walk and stoop, kneel, crouch, or crawl.
  • Specific vision abilities required by this job include close vision, depth perception, and ability to adjust focus.
  • Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
