The Gunyah is the treetop restaurant at Paperbark Camp, situated on Yuin country, just moments from the beautiful white sand beaches of Jervis Bay. With acclaimed glamping accommodation on site, we serve à la carte breakfast and dinner, 6 days a week, typically seating around 30+ guests for breakfast and 40+ for dinner.

We are seeking an experienced and inspiring Head Chef to lead the kitchen team and help shape the next chapter of The Gunyah. Our seasonal, modern Australian menu is influenced by Mediterranean cuisine and an Australian upbringing along the South Coast.

Job Description:

As Head Chef, reporting to the Camp Manager, you will be responsible for the overall leadership and management of the kitchen, maintaining high standards and continuing to build the restaurant’s reputation.

Key duties and responsibilities:

  • Leading and mentoring the kitchen team, fostering a positive, professional culture

  • Menu planning and development with a strong focus on local and seasonal produce

  • Calculating and controlling food costs and achieving agreed GP targets

  • Managing supplier relationships, stock control and ordering

  • Overseeing all food preparation, cooking, presentation and cleaning processes

  • Implementing and maintaining systems for consistency, efficiency and quality

  • Ensuring full compliance with hygiene, food safety and WHS regulations

  • Monitoring portion control and waste reduction to meet sustainability and cost goals

  • Working closely with the Camp Manager and front of house team to ensure smooth service and an outstanding guest experience

About You:

You will have solid experience as a Head Chef (or Senior Sous stepping up) in a similar, ideally fast-paced and well-regarded restaurant.

You will have strong technical skills, excellent communication, and the ability to lead by example.

You will also display the following attributes:

  • Creativity and a strong understanding of local, seasonal produce & Mediterranean-influenced cuisine

  • A professional, calm and organised demeanour

  • Self-motivation, initiative and strong problem-solving skills

  • Hard work, diligence and accountability

  • Genuine flexibility, resilience and a hands-on approach
