This individual will serve as a key leader, equally adept at diagnosing fermentation challenges on the floor as they are shaping strategy in leadership discussions. Position Summary
The Director of Technical Baking is responsible for leading all aspects of baking science, product commercialization, and process optimization across izzio’s commercial bakery operations. This role focuses on scaling artisan processes, advancing baking technology, and improving production performance while maintaining the integrity of our products.
As the organization’s technical authority on bread, this leader will play a critical role in enhancing production efficiency, supporting innovation, and driving continuous improvement across all bakery operations.
Key Responsibilities
Technical Baking Leadership
- Serve as the subject matter expert in artisan and commercial baking processes, including fermentation, mixing, dough handling, proofing, baking, and cooling
- Lead the successful scale-up of new products from R&D through full commercial production
- Train, coach, and elevate production teams in technical baking standards and best practices
- Partner with equipment manufacturers and ingredient suppliers to optimize performance and resolve technical challenges
Product Commercialization
- Translate R&D formulations into scalable, repeatable production processes
- Refine dough formulations and process parameters to ensure performance at scale
- Support new product launches by validating process readiness and operational feasibility
- Collaborate with cross-functional teams to ensure successful product execution in production
Process Optimization & Continuous Improvement
- Identify and implement improvements in formulations, workflows, and baking technology to increase efficiency and reduce waste
- Drive standardization of baking procedures across production lines
- Collaborate with engineering and operations teams to improve equipment performance and reliability
- Analyze production data to improve consistency and optimize throughput
Leadership & Cross-Functional Collaboration
- Manage and develop the Technical Baking team
- Partner with R&D, Operations, Maintenance, and Sales to align product performance with business goals
- Serve as a key technical voice in strategic planning and operational decision-making
- Education and relevant experience in food science or baking science.
- A minimum of 8 years of experience in commercial bread baking, with at least 3–5 years in a baking leadership or technical quality role.
- Deep understanding of dough fermentation, artisan processes, and commercial bread production.
- Proven ability to scale products and optimize baking processes in a high-volume environment
- Strong leadership skills with the ability to manage teams and drive results
- Excellent problem-solving, analytical, and communication skills

Compensation is based on the level of experience, other relevant experience, and requirements of the position. The range provided serves only as a guideline and does not automatically qualify all candidates (internal or external) for the high end of the range.
Base Salary Range: $150,000 to $185,000
