Overview

The Kitchen Lead supports back‑of‑house operations by managing workflow, maintaining food quality, and ensuring adherence to safety regulations. This role oversees prep, station assignments, and ticket pacing. The Kitchen Lead acts as the primary point of contact for BOH staff during service.

Responsibilities
  • Assign kitchen staff to stations based on the prep chart.
  • Maintain proper food temperatures and safety logs.
  • Oversee prep levels to prevent shortages.
  • Manage expo/pass and control kitchen pacing.
  • Ensure correct food presentation and portioning.
  • Enforce cleaning procedures for equipment and surfaces.
  • Support training and coaching for BOH staff.
  • Maintain storage organization and labeling standards.
  • Coordinate communication with FOH leaders.
  • Complete daily BOH checklists.
