Bread Team Lead


Job purpose
Tiny Boxwoods Bakery Leads care deeply about our culture and will provide a key role in contributing to our guest satisfaction. Pastry Leads assist in the preparation and production of the daily yeast/ bread products to the specifications and standards set by the Pastry Chef in a fast, quick- paced environment. The Shift Leader thrives on challenge and continually looks for opportunities to learn. They are as comfortable taking responsibility as they are delegating it. Shift leaders understand that guest satisfaction always takes priority, but efficient restaurant operations make it possible. Leads display a friendly, positive, and enthusiastic demeanor

Duties and responsibilities
The primary job duties and responsibilities of being a Bread Lead include but are not limited to the following:
  • Must be passionate about baking and pastries and bread
  • Must be responsible to take on shifts that cover from 4am-9pm
  • Must be able to follow traditional and modern recipes
  • Assist and lead in the preparation and baking of all yeast made products/ doughs that we do in house
  • Knowledge of mixing methods including kneading, creaming, whipping, and folding
  • Knowledge of yeast made products
  • Ability to operate commercial baking equipment including, ovens, mixers, sheeters, and proofing cabinets
  • Ability to accurately measure baking ingredients for production, using scales or graduated containers
  • Advanced knife skills including, chopping, cutting, and dicing
  • Contributes to team effort by accomplishing tasks effectively and quickly
  • Must adhere to sanitation, safety, and food regulations
  • Maintains a clean and sanitary workstation with proper mise en place
  • Must maintain a neat, clean, and well-groomed appearance, meeting the uniform standard
  • Clear communication both verbal and written
  • Performs up to the company standards, expectations, and policies
  • Perform other duties as directed
Team Leader Responsibilities
  • The team leader provides support, direction, and assistance to his subordinates on all areas of their assigned duties
  • The team leader is responsible for quality control, they must ensure product safety and freshness and accuracy.
  • The shift leader is responsible for reporting any issues or quality defects to their manager
  • The shift leader must make sure the workplace is safe and clean
  • Teamwork: Team leaders are part of a team and will be working with others to make a great working experience. Being a team player is essential.
  • Maintains regular and consistent attendance and punctuality
  • Acts with integrity and honesty while promoting Tiny boxwoods culture
Bread Expectations
  • Make sure all items are prepared for the date they are needed.
  • Make sure Austin orders are ready for delivery dates.
  • Communicates to Chefs that recipe procedures are up to date, provides written notes
  • from what they are currently doing, new products and tests
  • Organization of production
  • tracking of croissant products, sourdoughs, tortillas, cinnamon rolls, etc.
  • testing of croissant doughs
  • Maintains structure of team
  • Helps maintain time management with chefs
  • Checks on finished products on a weekly basis
  • Taste testing with chefs and team
  • Collaborates with chefs on new products
  • Viennoiserie (laminated croissant items) and bread.
Qualifications
Tiny Boxwoods Productions require the minimum qualifications required to successfully perform the position of Pastry Lead.
Qualifications include:
  • Texas Food Handlers certificate
  • Minimum three years' experience in pastry
  • Stage requirement
  • Capacity to multitask
  • Ability to work as part of a team
  • Must be able to take direction and delegate responsibilities
  • Able to work in a fast-paced environment
  • Able to work nights, weekends, and holidays
Working conditions
The incumbent will be working in a restaurant and bakery setting, in the kitchen and dish area. Potential hazards include but are not limited to cuts, slipping, tripping, falls and burns.
Frequent hand washing is required.
Physical requirements
The incumbent is required to stand/walk for long periods of time. Incumbent is regularly required to talk, hear, kneel, push, pull, with occasional ascending or descending ladders, stairs and ramps. This position is very active and requires the ability to lift and carry up to 40 lbs. and can constantly move around in the kitchen.
