The Culinary Butcher is responsible for the expert fabrication, trimming, and portioning of meats, poultry, and seafood to support the culinary operations. This role ensures the highest standards of quality, consistency, and food safety while aligning with the club’s commitment to exceptional dining experiences.
This position reports to the Director of Culinary.

About You:
You are or have recently been a chef/butcher in a high-quality, high-volume club or restaurant. Above all else, you are an extremely talented culinary professional
You clearly understand your strengths and weaknesses and are open to coaching and development from our Director of Culinary.

Requirements:Primary Responsibilities:
- Cutting, trimming, deboning, grinding, tying, and portioning meats (steaks, roasts, chops, and fish etc.). into expert portions for member/guest dining experiences.
- Inspect all incoming meat and seafood for freshness, quality, and compliance with club standards.
- Must evaluate and calculate protein requirements based on forecasted usage, ensuring accurate portioning and inventory control to minimize waste and maintain operational efficiency.
- Clean and sanitize the walk-in protein refrigerator daily; ensure all products are properly labeled, dated, and rotated according to FIFO (First-In, First-Out) standards to maintain food safety, freshness, and compliance with health regulations.
- Work closely with our Executive Chef and culinary team to assist in food prep and kitchen support.
- Bring creativity, teamwork, and a positive attitude to our energetic culinary environment
- Maintain accurate records of meat and seafood inventory; assist with ordering and storage to minimize waste.
- Works closely with chefs and culinary team to meet menu specifications and special event requirements.
- Sharpening knives and maintaining meat saws, grinders, and other machinery.
- Observes safety and security procedures and uses equipment and materials properly and ensures that we provide a safe workplace for our team.
- All other duties as assigned by management.
Education/Experience:
- Minimum 3 years’ experience in high-quality, fine dining environment
- Graduate from AOS culinary school or related degree
- Experience working at high end private clubs or in the hospitality industry desired, but not required
