About This Position

Description:

Position Summary:

The Bar Director is responsible for the creation and successful execution of the cocktail, beer, and

non-alcoholic beverage programs for all Market Bar & Restaurants and Ladino.

Operational Responsibilities:

  • Develop on-brand cocktail, beer, and non-alcoholic beverage menus for each restaurant concept with final approval from corporate
  • Update cocktail lists with each season, or more often if drinks are under performing
  • Source all spirits and work directly with distributors to find the best pricing for our brands
  • Order product for new concepts and train store level management and leads to order and cost effectively, handing off ordering when able, but continuing to oversee and audit
  • Develop opening and closing checklists for bars and ensure bar lead is overseeing daily completion
  • Develop daily, weekly, and quarterly cleaning schedules for the bars, ensure they are happening
  • Create recipe books and prep schedules that are easily followed by team members.
  • Occasionally rotate between restaurants working behind the bar as needed
  • Oversee the team, train, lead hospitality and build team morale
  • Curate and purchase small wares, glassware, and other opening inventory for new restaurants and ensure the FOH order guide is accurate for re-orders
  • Order and manager retail wine and beer inventory. Work with retail manager to develop system.

Staff Responsibilities:

  • Develop and implement execution of training programs for all bartenders
  • Develop and implement beverage education programs for all FOH team members
  • Provide direction to bar employees regarding operational and procedural issues
  • Responsible for recruiting/hiring bar leads and oversee their training
  • Assist store managers in recruiting/hiring bartenders when able
  • Mentor and develop bar leads and AGM in each restaurant by providing ongoing feedback, establishing performance expectations and conducting performance reviews with the General Manager
  • Always look for opportunities to improve hospitality, service and efficiencies in all restaurants, in and out of the bar, setting the bar when you are in any of our restaurants

Financial Responsibilities:

  • Provide monthly bar breakdowns to FOH corporate, and store managers that outlines the previous months bar performance including COGS, sales, and variances
  • Coach bar leads and management teams when needed on controlling liquor costs
  • Responsible for the cost management of all beverages apart from wine

Food & Beverage Requirements:

  • Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen, bars, and dining areas. Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances.
  • Must be ServSafe Manager certified and uphold all ServSafe guidelines.
  • Must be TABC certified.

  • Ability to lead by example, coach and mentor others effectively
  • Must be a problem solver and multi-tasker with strong communication skills

Working Conditions:

  • A typical work week for this position is 55 hours. Hours may vary.
  • Position requires prolonged standing, bending, stooping, twisting, lifting products and supplies weighing 45 pounds, and repetitive hand and wrist motion.
  • Work with hot, cold, and hazardous equipment as well as operates phones, computers, fax machines, copiers, and other office equipment.
