The Monarch San Antonio – A Legacy of Service and Sophistication

The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Overview

The Baker is responsible for producing high-quality breads, pastries, and baked goods that meet the exacting standards of luxury hotel guests. This role requires precision, consistency, creativity, and a strong passion for the craft of baking while supporting multiple outlets, banquets, and special events within a full-service hotel environment.

What You'll Do

Baking & Production

  • Prepare and bake breads, rolls, viennoiserie, and other baked goods according to established recipes and production schedules.
  • Measure, mix, knead, proof, and bake doughs and batters to achieve proper texture, flavor, and appearance.
  • Decorate baked goods when required, including artisan breads and specialty pastries.
  • Maintain consistency, quality, and presentation across all baked products.

Food Safety, Sanitation & Quality

  • Ensure proper storage, rotation, labeling, and handling of ingredients to maintain freshness and reduce waste.
  • Maintain cleanliness and organization of bakery equipment and work areas including ovens, mixers, and storage spaces.
  • Follow all food safety, sanitation, and hygiene standards, including HACCP and ServSafe guidelines.

Collaboration & Inventory Support

  • Assist with inventory management and report shortages or quality concerns to the Executive Pastry Chef or Head Baker.
  • Collaborate with culinary and service teams to meet guest expectations for quality, consistency, and presentation.
  • Support bakery operations during service periods, banquets, and special events as needed.

What You'll Bring

Required Education & Experience

  • High School Diploma or equivalent required.
  • Proven experience as a Baker required in a high-volume, fine-dining, or luxury hospitality environment.

Preferred Education

  • Culinary or bakery school training preferred.

Required Skills and Abilities

  • Strong knowledge of baking techniques including yeast breads, laminated doughs, pastries, and dessert preparation.
  • Ability to work efficiently under pressure while maintaining attention to detail.
  • Familiarity with modern baking trends and artisan techniques preferred.
  • Ability to stand for extended periods and work in a fast-paced kitchen environment.
  • Flexibility to work varied shifts including early mornings, weekends, and holidays.
  • Strong teamwork and communication skills.

Licenses or Certificates

  • Food Handler Certification required.
