The Monarch San Antonio – A Legacy of Service and Sophistication

The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Overview

The Overnight Cook is responsible for executing all food preparation and kitchen operations during the overnight shift while maintaining the high culinary standards expected of a Five-Star hotel. This role requires consistency, efficiency, attention to detail, and professionalism to support seamless overnight service and ensure a smooth transition to daytime operations within a luxury full-service hotel environment.

What You'll Do

Overnight Culinary Operations

• Prepare, cook, and present high-quality dishes according to established recipes and hotel standards.
• Manage overnight kitchen operations, including organization, cleanliness, and readiness for the morning shift.
• Monitor food production to minimize waste and optimize efficiency.
• Adapt to last-minute requests or changes while maintaining quality and presentation standards.

Food Safety, Sanitation & Quality

• Maintain impeccable cleanliness and sanitation standards in compliance with health and safety regulations.
• Ensure proper handling, storage, labeling, and rotation of food products.
• Assist in receiving and inspecting deliveries, ensuring freshness and proper storage.

Team Coordination & Shift Transition

• Collaborate with culinary and kitchen teams to ensure seamless handover to morning staff.
• Communicate any operational needs, shortages, or issues clearly and professionally.
• Uphold the hotel's commitment to exceptional guest experiences through attention to detail and consistency.

What You'll Bring

Required Education & Experience

• High School Diploma or equivalent required.
• Proven experience as a cook required, preferably in luxury hotels, fine dining, or high-volume establishments.

Preferred Education

• Culinary degree or relevant culinary certification preferred.

Required Skills and Abilities

• Strong knowledge of food preparation techniques, sanitation, and safety standards.
• Ability to work overnight shifts while maintaining focus, efficiency, and high performance.
• Ability to stand for extended periods and work in a fast-paced kitchen environment.
• Excellent organizational skills and attention to detail.
• Effective communication skills and ability to work as part of a team.

Licenses or Certificates

• Food Handler Certification required.
