Description
The Sous Chef is responsible for assisting the Executive Chef in operating the food production operation. This role is critical to the success of the dining program at Valley Hill Country Club. The Sous Chef assists in ensuring the quality and presentation of all food served, including lunch, dinner, private events, and staff meals. This position is a hands-on leadership role, responsible for managing and training the kitchen team.
Requirements
Job Responsibilities:
- Maintain a working knowledge of Club policies and guidelines as outlined in the Valley Hill Country Club handbook
- Assist the Executive Chef with scheduling, employee reviews, counseling, grievances, and staff motivation
- Communicate weekly schedules and document employee performance
- Support training and professional development for kitchen staff, including onboarding new a la carte staff and mentoring interns
- Ensure proper sanitation procedures are followed, including sanitizer concentrations, handwashing, and food storage
- Oversee kitchen cleaning programs and assign tasks to staff and stewards
- Supervise daily food preparation to ensure consistency in cooking methods, presentation, and portioning
- Expedite a la carte service and ensure all items meet quality standards
- Assist with banquet production, including plating, setup, and food quantity planning
- Conduct menu tastings with managers and service staff for new or updated items
- Monitor staffing levels to ensure productivity and quality while controlling food and labor costs
- Maintain knowledge of pricing, ordering, portioning, and menu specifications
- Assist with monthly inventories, cost controls, and food requisitioning
- Attend staff meetings and maintain a professional working relationship with all team members
- Respond to feedback and suggestions with a positive and solution-oriented approach
- Complete special projects as assigned by the Executive Chef
Working Conditions:

- Work environment is humid, wet, and often warm

- Ability to work a flexible schedule, including weekends and holidays
- Strong teamwork and communication skills
- Outgoing personality with attention to detail
- High level of integrity and professionalism
- Knowledge of dietary considerations such as low-fat, gluten-free, and low-sodium preparation
- Courteous and respectful demeanor at all times
- Willingness to take initiative and identify areas for improvement
Physical Requirements:
- Ability to stand, walk, and move for extended periods, up to 10 hours per day
- Capable of lifting, pushing, or pulling up to 50 lbs
- Manual dexterity to handle tools and equipment
- Ability to communicate effectively with members, guests, and staff
- Vision abilities sufficient for close work, distance, and depth perception
- Independent mobility throughout the Clubhouse
Salary:
$60,000 to $65,000 annually
