The Monarch San Antonio – A Legacy of Service and Sophistication

The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Overview

The Pastry Cook assists in producing exceptional desserts, pastries, breads, and confections that reflect the highest standards of quality, presentation, and creativity. This role requires precision, attention to detail, and collaboration in a fast-paced luxury hotel pastry kitchen supporting multiple outlets, banquets, and special events.

What You'll Do

Pastry Production & Execution

• Prepare and execute a variety of pastries, desserts, breads, and confections according to established recipes and production schedules.
• Ensure consistency, quality, and presentation standards are met for all pastry items.
• Support service periods, banquets, and special events with timely and accurate pastry production.

Recipe Development & Creativity

• Assist in developing and testing new recipes, menu items, and seasonal pastry offerings under the guidance of the Executive Pastry Chef.
• Stay aligned with current dessert trends and presentation standards.

Food Safety, Sanitation & Quality

• Maintain clean, organized, and sanitized workstations, equipment, and tools.
• Ensure proper storage, labeling, rotation, and handling of ingredients to maintain freshness and minimize waste.
• Follow food safety, sanitation, and hygiene standards, including HACCP and ServSafe guidelines.

Team Collaboration & Inventory Support

• Collaborate with culinary and service teams to meet the expectations of luxury hotel guests.
• Monitor inventory levels and report shortages or quality concerns to the Executive Pastry Chef.
• Communicate effectively to support smooth daily operations.

What You'll Bring

Required Education & Experience

• High School Diploma or equivalent required.
• Proven experience as a Pastry Cook or in a similar role within fine-dining, luxury hotels, or high-volume bakery environments required.

Preferred Education

• Culinary or pastry school training preferred.

Required Skills and Abilities

• Strong knowledge of pastry techniques, baking, chocolate work, and dessert presentation.
• Ability to work efficiently under pressure while maintaining precision and attention to detail.
• Strong organizational skills and commitment to quality.
• Flexibility to work shifts including evenings, weekends, and holidays.
• Ability to work collaboratively as part of a professional pastry team.

Licenses or Certificates

• Food Handler Certification required.
